Chickpea Spinach Curry Recipe

  • 2 tablespoons vegetable oil
  • 1 large onion, finely chopped

  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon ground turmeric
  • 1/2 teaspoon ground paprika
  • 1/4 teaspoon cayenne pepper (optional)
  • 1 (15 oz) can chickpeas, drained and rinsed
  • 1 (14.5 oz) can diced tomatoes
  • 1 cup vegetable broth
  • 4 cups fresh spinach, chopped
  • Salt and pepper, to taste
  • 1/2 cup plain yogurt (optional)
  • Fresh cilantro, for garnish
  • Cooked rice or naan, for serving

Instructions:

  1. Heat vegetable oil in a large skillet over medium heat. Add the onion and cook until softened and translucent, about 5-7 minutes.
  2. Add the garlic and ginger, and cook for another 1-2 minutes until fragrant.
  3. Stir in the curry powder, cumin, coriander, turmeric, paprika, and cayenne pepper (if using). Cook for 1 minute, allowing the spices to become aromatic.
  4. Add the chickpeas, diced tomatoes, and vegetable broth to the skillet. Bring the mixture to a simmer, then reduce the heat to low and cook for 15 minutes, stirring occasionally.

  6. Season with salt and pepper to taste. If desired, stir in yogurt for a creamier texture.
