Ingredients
- 4 chicken thighs, bone-in and skin-on
- 4 cups of mixed veggies (such as broccoli florets, sliced bell peppers, sliced onions, and sliced zucchini)
- 3 tbsp of olive oil
- 2 tbsp of lemon juice
- 2 cloves of garlic, minced
- 1 tsp of dried oregano
- Salt and pepper, to taste
Instructions
- Preheat your oven to 425°F (218°C).
- In a small bowl, whisk together the olive oil, lemon juice, garlic, oregano, salt, and pepper.
- On a large sheet pan, arrange the chicken thighs and veggies in a single layer.
- Drizzle the olive oil mixture over the chicken and veggies, making sure everything is coated.
- Roast in the oven for 25-30 minutes, or until the chicken is cooked through and the veggies are tender and slightly caramelized.
