Sheet Pan Lemon Garlic Chicken and Veggies

Ingredients

  • 4 chicken thighs, bone-in and skin-on
  • 4 cups of mixed veggies (such as broccoli florets, sliced bell peppers, sliced onions, and sliced zucchini)
  • 3 tbsp of olive oil
  • 2 tbsp of lemon juice
  • 2 cloves of garlic, minced
  • 1 tsp of dried oregano
  • Salt and pepper, to taste

Instructions

  1. Preheat your oven to 425°F (218°C).
  2. In a small bowl, whisk together the olive oil, lemon juice, garlic, oregano, salt, and pepper.
  3. On a large sheet pan, arrange the chicken thighs and veggies in a single layer.
  4. Drizzle the olive oil mixture over the chicken and veggies, making sure everything is coated.
  5. Roast in the oven for 25-30 minutes, or until the chicken is cooked through and the veggies are tender and slightly caramelized.
